Fresh Start, New year

Hey guys! You may ask why this post is called Fresh Start, New year.. Well that's because this isn't my first blog post.. But I rarely posted so I felt it was a good time for a fresh start and its a new year hehe yeah!

I'm going to be honest. I'm sure we all well most have the new year resolution to be healthy! Mhm yeah well this blog isn't going to be purely healthy but I thought about trying something new.. Something that is healthy and abit different from the usual.


1. Breakfast Burritos


Ingredients: 

♥ Vegetable cooking spray

♥ 2 egg whites
♥ 2 whole wheat tortillas
♥ 1/4 cup cheese
♥ 1/4 rinsed canned beans (Such as pinto beans or black beans)
♥ Salsa ( for the flavor)

Prep: 5 minutes   | Cook: 5 minutes  | Total time: 10 minutes


 Method: 


1. Spray vegetable cooking spray into a frying pan.

2. Scramble the egg whites in the pan 
3. Place the cooked eggs on to the tortillas.
4. Sprinkle the cheese over the eggs.
5. Place the beans over the cheese and eggs.
6. Roll each tortilla into a wrap.
7. Microwave for 30 seconds.
8. Spoon salsa on top.


2. Scrambled Eggs with Smoked Salmon Asparagus and Goats Cheese


Ingredients:

♥ 1 tbsp butter
♥ 2 stalks asparagus
♥ salt and black pepper
♥ 2 eggs
♥ milk
♥ goats cheese
♥ smoked salmon, chopped


Method:


1. Heat the butter in a large nonstick skillet or saute pan over medium heat. When the butter begins to foam, add the asparagus and cook until tender. Season with salt and pepper.

2.Crack the eggs into a large bowl and whisk with the milk. Season with a few pinches of salt and pepper and add to the pain with the asparagus. Turn the heat down to low and use a wooden spoon to consstatnly stir and scrape the eggs until they begin to form soft curds. A minute before they're done, stir in the goat cheese.
3. remove from the heat when the eggs are still creamy and soft ( remember, scrammed eggs are like meat-- they continue to cook even after  you cut the heat) and fold in the smoked salmon.

3. Buttermilk and Blueberry Pancakes


Ingredients:

♥ 1/4 cup oats
♥ 1/2 cup whole wheat flour
♥ 3 tablespoons sugar
♥ 1/2 teaspoon baking powder
♥ 1/4 teaspoon baking soda
♥ 1/8 teaspoon salt
♥ 1 cup low-fat buttermilk
♥ 1 egg
♥ 1 tablespoon unsalted butter, melted
♥ 1 teaspoon grated fresh lemon peel
♥ 1 cup fresh blueberries
♥ 1/2 cup maple syrup


Method:


1. In a bowl, combine the oats, flour, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, combine the buttermilk, egg, butter, and lemon peel. Pour the buttermilk mixture into the oat mixture, stirring until just moistened. Gently fold in the blueberries with a rubber spatula. Refrigerate for 30 minutes. Coat a large nonstick skillet with cooking spray and heat over medium heat. Spoon four 1/4 cupfuls of batter into the skillet and cook until the tops begin to bubble slightly, and 2 1/2 to 3 minutes. Turn the pancakes and cook 2 1/2 to 3 minutes longer, or until golden and cooked through. Transfer to a baking sheet and keep warm in the oven. Repeat with the remaining batter. Divide the maple syrup over the pancakes.
3. Preheat the oven to 250ºF. Coat a large nonstick skillet with cooking spray and heat over medium heat. Spoon four 1/4 cupfuls of batter into the skillet and cook until the tops begin to bubble slightly, and 2 1/2 to 3 minutes. Turn the pancakes and cook 2 1/2 to 3 minutes longer, or until golden and cooked through. Transfer to a baking sheet and keep warm in the oven. Repeat with the remaining batter. Divide the maple syrup over the pancakes.
